This easy and simple chicken ranch tacos recipe is a quick weekend lunch or weeknight dinner idea the whole family will love.

I’ll just be honest here…I found a dairy-free ranch dressing and I about died.

So, I resumed my ancient and time-honored rite of dousing everything in ranch.

It’s a southern-girl thing. I think.

Simple Chicken Ranch Tacos

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Simple Chicken Ranch Tacos are like the finest grade of awesome you can imagine. Just a few bites and you're transported--it's a freaking taco that is what it's name implies. It doesn't take you anywhere. Heh.

Ingredients

  • 1 1/2 lbs chicken breast
  • 1 tblspn olive oil
  • 1 small bell pepper
  • 1 tblspn homemade taco seasoning
  • 4 tblspn dairy-free ranch dressing
  • 1/2 cup canned corn
  • 1/2 head of butter lettuce or romaine or whatever lettuce you dig
  • 6 flour tortillas

Instructions

  1. In a pan over high heat, place the oil.
  2. Once the oil is hot, lay the chicken in the oil.
  3. Sprinkle the taco seasoning over the chicken.
  4. Slice bell pepper and immediately add to the pan.
  5. When the chicken is browned on the bottom, flip it.
  6. Stir the bell pepper.
  7. Add the corn to the pan.
  8. Stir some more.
  9. Once the chicken is cooked, turn off the heat.
  10. Allow chicken to cool until you can handle it.
  11. Slice chicken into bits.
  12. Layer in the tortillas.
  13. Add lettuce and a drizzle of the ranch dressing.
  14. Serve.
