There was a time when breakfast was a simple affair.

Leftover pizza, cold and tasty, straight from the fridge or a handful of cereal as I dashed out the door to class.

Alas, college is over and I must (sigh) adult now.

Because the small children in my home, those toddlers of terror, demand actual sustenance to survive.

Thus was born the Simple Breakfast Tacos of awesome.

I can make these with my eyes closed, ladies–which is convenient, because sometimes I’m not 100% awake at 5am when the tiny monsters that control my household are ready for their bek-fess.

Really, this is not just a breakfast food.

Let’s be honest with ourselves here. Someone (meaning me), has made these on multiple occassions for brunch, lunch, lupper, and even dinner.

Because tiny monsters that say “bek-fess cocko” at the top of their lungs with that high-pitched squeal–they get what they want.

I’ll be damned if I let anyone stop me from ending that torture.

I swear that noise is going to kill me one day–it’s an aneurysm in the making.

Also, to put your minds at ease, I have plans for the tiny monsters to grow up and make their own Simple Breakfast Tacos, so that when they’re in their twenties, they don’t have to squeal like that to get them.

So you can rest assured I’m not releasing that noise into the universe intentionally in the future, just placating it for now.

Surely you understand? Tell me you understand…that noise.

In all seriousness, one of the reasons my kiddos love the Simple Breakfast Tacos so much is the fact that I let them help crack the eggs and crumble the bacon (if it’s not hot).

They also love to play a part in putting the tacos themselves together, but that results in a LOT of crushed shells, slopped salsa and cheese in every corner of the kitchen.

So, I try to avoid letting them help assemble. Mostly, I let them disassemble them into their tummies. So much more fun.

OMG, don’t those just look DELISH?!

Simple Breakfast Tacos Recipe

Simple Breakfast Tacos

Prep Time: 1 minute
Cook Time: 10 minutes
Total Time: 11 minutes

I have no clue if this is actual Mexican food or if it's some horrid tex-mex hybrid someone made up in my youth. But it's darn good and easy to make. So try it.

Ingredients

  • 4 large eggs
  • 4 slices bacon, cooked
  • 1/2 cup cheese
  • 1/4 cup salsa
  • 4 taco shells, gluten free crispy is our fave

Instructions

  1. Scramble your eggs. If you don't know how to do that, here's a breakdown: crack and put them in a bowl, then use a fork to whip them crazy, plop them in a hot pan with some melty vegan butter (like one tablespoon of vegan butter) and stir until the egg is cooked and maybe even a littttle brownish on the edges (that's how I like them).
  2. Crumble the bacon slices.
  3. Spoon 1 scrambled egg into your taco shell, followed by one crumbled bacon slice, a tablespoon of salsa and a tablespoon of the cheese.
  4. Repeat for remaining 3 tacos.
  5. Eat.
  6. Repeat.
  7. Until the squealing stops.
