It’s was a spring cleaning day. Well… there’s no particular schedule actually. I’ll declare it whenever I want to. LOL! And so, we were all busy buddies in the house. My kids were excited as well. They have some new bedsheets and curtains. But they have to clean and tidy up their room firsts.

You know, if you want your kids to help you in their best mood, you should know how to reward them. Luckily for me, they are always happy to do some house chores. That’s why I always prepare some really nice snacks. Like these Pecan Crumb Muffins.

How to make easy Pecan Crumb Muffins?

To make this recipe is quite easy. Of course, you are going to need the ingredients. They are listed below.

The ingredients

Ingredients for Pecan Crumb Muffins

For the muffins:

  • 1 cup vegetable oil
  • 1 1/2 teaspoon vanilla extract
  • 2 eggs
  • 1 cup milk
  • 1 cup sugar
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 Tablespoon cinnamon, optional

For the streusel topping:

  • 1 cup flour
  • 1 cup brown sugar
  • 2 Tablespoons cinnamon
  • 6 Tablespoons butter, melted
  • 1/2 cup chopped pecans

To begin with, preheat your oven to 350°F. Grease or line 2 muffin trays with muffin liners, and then set aside.

To begin the process

Beat the oil, eggs, vanilla and milk together in a large bowl. Then add the sugar. Continue beating until there are no sugar crystals remain.

Next, stir the flour, baking powder, salt, and optional cinnamon together in a small bowl. Then stir these dry ingredients into the oil mixture until combined.

Pecan Crumb Muffins

Have this mixture in portions about 1/3 cup of batter into each of the prepared muffin liners. You can use a cookie scoop.

For the streusel topping, combine the streusel topping ingredients in a small bowl and then sprinkle over the wet batter.

Bake for 18-24 minutes until an inserted toothpick comes out clean. Remove from the oven. Cool and serve.
