I love how easy this recipe for this gluten-free and vegan cookie dough milkshake comes together...so yummy, I think I need one NOW! LOL!

I have to be honest. I am a little addicted to cookie dough. Ever since I was a young adult and discovered cookie dough ice cream, my world really changed. I pretty much had a cookie dough ice cream IV installed when I was pregnant the first time…and my love just keeps growing to new levels. As a fun twist on my typical cookie dough ice cream, I decided to make an Overloaded Vegan & Gluten-Free Cookie Dough Milkshake. Yeah, that’s right–a milkshake of my favorite stuff. Just all mixed together there for the delicious enjoyment…ah, the yummy sounds I shall make (bonus points to you if you know which movie “yummy sounds” comes from).

Now, that being said, I am quiet dairy-intolerant…and I just found out yesterday that baby Donut is not only dairy intolerant–she’s actually allergic to the dairy protein (along with wheat and dogs–such a random combo). So, that changes the way I cook forever. So, you won’t be seeing too many more recipes that call for milk. Or butter. Or wheat. Because, you know, I’m the kind of gal that if one person in the family is allergic–we all run away screaming.

However, as you all know, my 13 year old son is NOT allergic to anything. And he feels it is a great reward to have something he can’t normally get. So, you might occasionally see something I make for him that has nuts, eggs, dairy, or wheat (yes, there’s someone in my family allergic to each of those things–so cooking is kind of fun and creative here). Don’t poo-poo those recipes or feel like I’m being un-authentic. He really does love a good treat just for him. LOL!

Which brings me back around to the overloaded cookie dough milkshake. I love it. My baby girls LOVED it…it just kind of makes everyone smile (and doesn’t send anyone to the ER, conveniently). So, enjoy, my lovelies. Enjoy.

Overloaded Vegan & Gluten-Free Cookie Dough Milkshake

Overloaded Vegan & Gluten-Free Cookie Dough Milkshake

I decided to make an Overloaded Vegan & Gluten-Free Cookie Dough Milkshake. Yeah, that's right--a milkshake of my favorite stuff. Just all mixed together there for the delicious enjoyment.

Ingredients

  • Ice Cream
  • 4 cans coconut milk
  • 1 cup powdered sugar
  • 4 tspn vanilla extract
  • Cookie Dough
  • 1/4 cup loose brown sugar
  • 1/4 cup granulated white sugar
  • 1 1/2 tblspn coconut milk, the kind you use for cereal, not the canned kind, unless that’s all you’ve got, but really at that point, don’t open a whole can to do this…just put some water in the milk’s place and see how it works out
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1/4 cup coconut oil, room temperature
  • 1/2 cup oat flour, or, you can be cheap and lazy like me and just use baby oatmeal cereal
  • 1/4 cup dairy-free chocolate chips, homemade or some of that store bought stuff, either way…but one day I’m going to make a recipe for some made with chocolate liqueur, so keep an eye-out for that

Instructions

  1. To make the ice cream, open your cans and scoop the thick cream part into a bowl, trying to get as little of the coconut water as possible. Discard coconut water or just set aside for chugging later, whatever.
  2. Add the powdered sugar and vanilla to the coconut cream.
  3. Mix on high 2-3 minutes with a hand mixer until it becomes stiff and fluffy.
  4. Place in the freezer for about 2 hours. Or just an hour, if you're super-duper impatient like I am.
  5. To make the cookie dough, cream the coconut oil and sugars together.
  6. Add vanilla, milk and salt and mix thoroughly.
  7. Mix-in the oat flour in 1/4 cup increments until mixture is smooth.
  8. Stir-in the chocolate chips.
  9. Place in the refrigerator for at least 10 minutes to allow the oat flour to “set”.
  10. Make this all come together in a symphony of awesome by dividing your cookie dough into 1/4 and 3/4 portions. Set aside the 1/4 portion.
  11. Using a food processor or blender (I used a blender because my husband accidentally tossed my food processor when we moved a few years ago and I haven't gotten a new now...hint, hint for mother's day...), combine the ice cream and the 3/4 portion of the cookie dough.
  12. You want this mixture to be smooth, so if you need to add a little coconut milk, you can...just not too much or it'll be too runny...and not very milk-shake like.
  13. Place this mixture in a glass (as exhibited in the pictures) and make little balls of cookie dough, using your 1/4 portion you set aside earlier.
  14. Drop these little balls of cookie dough into your glasses of milkshake awesome and consume, my friend, consume. LOL!
