What You’ll Need to Make Mamma’s Ultimate Tacos:

  1. Ground beef, 1 pound
  2. Onion, 1/2 cup finely chopped
  3. Ground Cumin, 1/2 teaspoon
  4. Chili Powder, 1 teaspoon
  5. Cayenne Pepper. to taste
  6. Cooking Oil, 3 tablespoons, plus a little extra
  7. Corn Tortillas, 6
  8. Lettuce, 1 cup shredded
  9. Cheddar or Monterrey Jack Cheese, 1 cup grated
  10. Tomato, 1 medium, cubed
  11. Sour Cream
  12. Picante Sauce

Let’s make Mamma’s Ultimate Tacos!

  1. Chop the onion and place 1/4 cup in a small serving bowl, set aside.
  2. In a medium-sized skillet, over low heat, add the 3 tablespoons of cooking oil and the remaining onion. Saute until the onion is tender, stirring occasionally.
  3. While the onion is cooking, shred the lettuce into a medium-size serving bowl, set aside.
  4. Grate the cheese into a medium-size serving bowl, set aside.
  5. Cut up the tomato, place in a serving bowl, and set aside.
  6. The onion should be tender by now. Add the ground beef to the skillet, and turn the heat up to medium.
  7. Season the ground beef with salt and pepper, the ground cumin, chili powder, and cayenne.
  8. Using a spatula, frequently turn and separate the ground beef, so you have small chunks of meat. Continue cooking until the meat is cooked through and brown.
  9. Remove the browned beef from the skillet to a paper-towel lined serving bowl. Remove the paper towel after the oil has been soaked up and before serving.
  10. On a stove-top griddle, over medium heat, pour a couple drops of cooking oil, and place a tortilla on top of the oil. Wait until the tortilla sizzles, using tongs flip the tortilla over to the other side. Fold the tortilla in half, but do not crease. Let the tortilla stay on that side for about 1 minute, then turn it over to the other side, and let it heat for about 30 to 45 seconds. Remove from griddle to a paper-towel lined serving bowl. Repeat until all tortillas are transformed into taco shells. I like to have the tortillas hot, but not crisp.

At our house, we put all the serving bowls on the table and let each person assemble their own taco. This is the way the assembly usually goes. Take a taco shell and paint the inside with sour cream. Add a spoonful of ground meat. Lavish with chopped onion, tomato, grated cheese and shredded lettuce. Add a teaspoon or so of picante sauce. DIG IN! It doesn’t matter how often or how many of these tacos I make. There are never any complaints about what’s for dinner, and there are seldom any leftovers. I promise you’re gonna enjoy this meal!
