I can't believe how easy this coffee cake was to make and, get this, it's eggless and dairy-free! LOVE!

Waking-up on Saturday mornings isn’t my forte. Honestly, before we had kids, I would sleep until noon (and sometimes later). I would so much rather sleep than be up doing things, even watching TV…It makes it way easier getting up early (ugh, 7am, who made that a real hour of the day?!) knowing that I can make some scrumptious deliciousness for breakfast. One of my fave recipes for breakfast lately is my Mamma’s Easy Coffee Cake. Perfect for those quiet fall mornings when children are screaming as they run through the kitchen and you’re still in your robe, sipping a cup of coffee. We love it so much, we nibble on the cake all day and then there’s hardly any leftovers…so sad…

Ingredients for Mamma’s Easy Coffee Cake

Cake

  • 4 cups flour
  • 2 cups coconut milk
  • 1/2 cup coconut oil
  • 1 cup apple sauce
  • 1 cup sugar
  • 3 tspn baking powder
  • 2 tspn salt

Filling

  • 1 tspn cinnamon
  • 1/3 cup brown sugar
  • 1/3 cup melted coconut oil

Crumble Bottom

  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tspn cinnamon
  • 1/4 cup melted coconut oil

How to Make Mamma’s Easy Coffee Cake

  1. Preheat oven to 350-degrees.
  2. Flour bundt pan to reduce sticking.
  3. To make the cake batter, combine wet ingredients in a medium bowl.
  4. Mix dry ingredients in a large bowl.
  5. Add wet ingredients to dry in 1/2 cup increments and blend until smooth.
  6. Pour half of the cake batter into the bundt pan. Set aside.
  7. To make filling, combine ingredients in a small bowl and mix until smooth.
  8. Spoon filling on top of cake batter in the bundt pan.
  9. Spoon the other half of the cake batter on top of the filling in the bundt pan.
  10. To make the crumble bottom, mix ingredients in a small bowl (you can use the same bowl that you made the filling in to reduce cleaning later).
  11. Spoon crumble bottom mixture onto the cake batter and pat gently.
  12. Bake for 45 to 50 minutes or until knife comes out clean.
  13. Allow to cool for 10 minutes before removing from bundt pan and serving.
  14. Enjoy!
