Instant Pot Braised Beef – 1 Roast, 3 Freezer Meals

This week, I was at Albertsons, checking out their goodies, doing my regular grocery shopping (scoping out the Stock Up Sale, you know how it is), and I had this brilliant idea.

What if I made Instant Pot Braised Beef? I’d use 1 Roast and be able to make 3 Freezer Meals….that’s one cooking experience that results in 3 meals–the math of how much I was going to save in money and time was, in two words: Mind. Blowing.

But what do you need for Instant Pot Braised Beef?

Well, to be honest, I was making up this recipe on the fly, so I grabbed some Coca-Cola Classic Soda to cook the roast in, some Gold Medal Enriched Flour for one of the freezer meals (hint: it’s chili), and some Bounty Select-A-Size Paper Towels to clean up the mess I knew I’d make doing all this.

I purchased these products and more at my local Albertsons, but you can also stock up and save at any of the Albertsons Companies family of stores including Safeway, ACME Markets, Jewel-Osco, Vons, Pavilions, Randalls, Tom Thumb, Shaw’s, Star Market, and Carrs/Safeway. So, after I got home with all my Coca-Cola, Gold Medal Flour and Bounty? Well, I got to work on the Instant Pot Braised Beef.

Let me tell you, it was soooooo good and tender, I could have stopped there. I mean, look at that roast.

It was amazing.

But, stopping there seemed like not taking this crazy thing all the way to the finish line.

I had to do the the Three Freezer Meals. Because the inspiration by being surrounded by all those great deals at Albertsons Stock Up Sale was too much for this girl.

In minutes, I had cracked open a Coca-Cola and was chopping the Instant Pot Braised Beef, getting the freezer meals ready to go.

My kids had been begging me for them, so the first freezer meal was an obvious choice: Beef Enchiladas.

Chop 1/3 of the roast into bits and pieces, then stuff them in corn tortillas.

Roll and pop those in the freezer. Then, it’s super simple to cook–you just throw them in oven with a can of enchilada sauce and grated cheese. Literally a 10 minute meal, if that.

I decided for my second freezer meal to make some Beef-Stuffed Buns.

Super-quick to put together, and the flavor is outstanding (see all that Coca-Cola Classic adding it’s flavor? mmmm….)–I kind of impressed myself with this one.

I just took a package of ready-made biscuits, flattened them into saucers, then placed a pinch of the chopped Braised Beef in the middle.

Smoosh them up like a little purse to close, then put them on a plate, ready to bake–then freeze until you’re good and ready for dinner. Pop that in the oven and make a quick batch of mashed potatoes and gravy? So good and so fast.

By simply chopping the roast, adding 2 tablespoons of Gold Medal Flour to the au jus, and mixing the chopped meat and au jus together has me ready to make Chili for my final freezer meal.

Seriously, when it’s time to pull it out of the freezer and cook, I’ll just toss some chili powder, diced tomatoes and maybe some beans in the pot and we’ll be ready to go.

Throw a little Hot Water Cornbread with it and you have a whole meal–in 10 minutes.

And the clean-up? A cinch with the Bounty Select-a-Size paper towels. For real–they soak up all the mess.

Instant Pot Braised Beef

Ingredients

  • 3 lb Chuck Roast
  • 1/2 cup Chicken Broth
  • 1/2 cup Coca-Cola Classic
  • 1 small Onion
  • 1 tspn Parsley
  • 1 tspn Salt
  • 2 tbspn Olive Oil

Instructions

  1. Using the sauté setting, add the olive oil and minced garlic to the Instant Pot.
  2. Dice onion and add to the Instant Pot.
  3. While onion and garlic are cooking, add roast to the Instant Pot and brown each side for 2 minutes.
  4. Remove roast from the Instant Pot and allow it to rest on a plate.
  5. Add 1/4 cup chicken broth to the Instant Pot and deglaze.
  6. Place roast back in Instant Pot, fat side down, and add the remaining broth and Coca-Cola Classic.
  7. Lock lid in place and turn Instant Pot on High for 20 minutes.
  8. Natural release.
  9. Remove roast and au jus from Instant Pot.
