My kids are super keen on me letting them watch all of the Harry Potter movies.
I’m not 100% on that.
They said Carmen Sandiego was “too scary” in the first five minutes of the first episode.
Not that I really believe them–I mean, they wanted to watch Barbie Dreamhouse Adventures and I turned on Carmen Sandiego.
So, who knows if it’s really too scary or not?! Not me.
But, while I continue to debate in my mind whether it’s ok for them to watch Deathly Hollows (just kidding, I am not sure we’ll make it to Prisoner of Azkaban), I figured out How to Make Butterbeer (Vegan & Non-Alcoholic) for them so that they can enjoy a delicious beverage on their first trip to Hogwarts.
The best part about giving my kids a big cup of this Butterbeer drink was that they acted like I’d given them a key to the world–or a caffeinated beverage.
They were literally so excited.

So, even if it was horrible (which it wasn’t–it was AMAZING), they were already positive.
And me? I was totally positive too–because making this vegan butterbeer was so easy.

Ingredients
Butterbeer
- 1 cup brown sugar
- 1/2 tspn apple cider vinegar
- 1½ tspn vanilla
- ¾ tspn salt
- ½ cup coconut cream so, chill a can of coconut milk overnight, then scoop the thick stuff out--drain the water away
- 3 cans Cream Soda
Whipped Topping
- 2 cans coconut milk chilled overnight
- 1/2 cup powdered sugar
Instructions
Butterbeer
- Place the brown sugar, apple cider vinegar, salt and vanilla in a pot over high heat.
- Add the coconut cream and stir.
- Stir for a long, long time until the caramel is all soft and smooooth.
- Remove from heat and allow to cool.
- Mix in the cream soda until everything is dissolved and the mixture is consistent (no floaters).
Whipped Topping
- Open the cans of coconut milk and place coconut cream in a large bowl, discarding the coconut water (unless you love to drink that).
- Combine coconut cream and powdered sugar with a hand mixer.
- Place large dollop of the whipped topping on a serving of the butterbeer.
- Serve warm or chilled.

I would use it immediately or put it in the freezer. I have stored some in the freezer for YEARS.
