Homemade Pumpkin Spice Cinnamon Rolls

It’s not every day I get to do something fun for breakfast for the whole family. Even on the weekends, it’s really hard to get everyone around the table. With all the reading my son is busy with, the programming my hubster is into and the fun experimenting the girls are in to, I just can’t find the time. But I made time this weekend–and here’s why you love me. Because, for you, I’m sharing. Go ahead and tie-on your aprons (who wears one of those anyway?!) and start walking to the kitchen, because here’s the recipe you’ve been waiting all year long for: Homemade Pumpkin Spice Cinnamon Rolls.

These homemade pumpkin spice cinnamon rolls are so easy to make--and ridiculously yummy. I will NEVER buy store-bought cinnamon rolls again.

Ingredients for Homemade Pumpkin Spice Cinnamon Rolls

Dough

  • 1 cup and 2 tblspn warm water
  • 1/4 cup sugar
  • 2 tblspn oil
  • 2 tblspn yeast
  • 1/4 tblspn salt
  • 1/4 cup apple sauce (you can probably use pumpkin here, but I didn’t because I didn’t want the pumpkin to overwhelm–but I’m pretty sure pumpkin would be great here instead of the apple)
  • 2 3/4 cup flour

Filling

  • 1/3 cup sugar
  • 2 tspn cinnamon
  • 1/2 tspn allspice
  • 1/2 tspn nutmeg
  • 2 tblspn pumpkin

Frosting 

  • 1 tblspn pumpkin
  • 1 tspn cinnamon
  • 1 pinch salt
  • 1 tspn vanilla
  • 3 cups powdered sugar
  • 1 tspn coconut milk

You guys better tie-on your aprons (who wears one of those anyway?!) and start walking to the kitchen, because here's the recipe you've been waiting for. Homemade Pumpkin Spice Cinnamon Rolls.

How to Make Homemade Pumpkin Spice Cinnamon Rolls

  1. To make the dough, mix the water, yeast, sugar and oil together.
  2. Allow the mixture to sit for 15 minutes at room temperature.
  3. Add the salt, apple sauce and flour to the mixture.
  4. Mix together for 10 minutes using a dough hook on a big mixer (trust me).
  5. Turn off the mixer and let dough stand for 10 minutes.
  6. While this is standing, place all ingredients for the filling into a small bowl and mix together thoroughly. Set aside.
  7. Preheat oven to 400 degrees.
  8. Lay-out a large piece of wax paper and spray liberally with your favorite oil-type cooking spray (I use a coconut oil spray). Do not use flour.
  9. Place the dough on the wax paper.
  10. Using your hands (a rolling pin simply won’t work right–I tried), flatten the dough into a large rectangle.
  11. Spread the filling mixture evenly across the entire rectangle of dough.
  12. Using the wax paper, lift the “short side” of the dough and roll the rectangle tightly-ish, but not too tight.
  13. Using a sharp knife, cut the dough into into 12 rolls.
  14. Place on greased cookie sheet or cake pan (I prefer a round cake pan so I can get that one cinnamon roll in the center that doesn’t have any crispy edges…mmmm…).
  15. Allow the cinnamon rolls to rise. You may allow them to rise to any height you desire. I recommend approximately 10 minutes–that makes for a super fluffy, fun cinnamon roll.
  16. Place in the oven and bake for 12-15 minutes.
  17. Remove from heat and allow to cool before icing.
  18. Devour your precious cinnamon rolls and begin again!
