Hearty Breakfast Mini-Pockets

No doubt, my kids never, ever go hungry at breakfast. I cook enough so that there’s always leftovers and I’ve found an awesome way to make sure I’m using those leftovers to make fun breakfast for the next day–or even to tuck into the kiddos’ lunches for a special non-sandwich treat. One of my favorite recipe ideas I’ve come up with for this purpose is Hearty Breakfast Mini-Pockets. I mean, really, who doesn’t love a little pocket of meat, cheese, and egg. That’s a recipe for a smile if I’ve ever heard one.

These little breakfast mini-pockets are so cute and the kids love getting them in their lunch boxes. Makes me a good mom, no doubt! LOL!

Ingredients for Hearty Breakfast Mini-Pockets

  • 2 slices of bread
  • 2 tspn scrambled egg
  • 2 tspn breakfast sausage, cooked
  • 2 tspn cheese (grated or sliced, it doesn’t matter)
  • 2 tspn coconut oil (or butter, if you prefer, but I like coconut oil for the health-factor)

How to Make Hearty Breakfast Mini-Pockets

  1. Preheat the oven to 350-degrees.
  2. Using a rolling pin, flatten your bread slices individually.
  3. Using a large round cookie cutter or cup (that’s what I had to use, since I don’t have a round cookie cutter), one large circle from each flat bread slice.
  4. Place 1 tspn of egg, 1 tspn of sausage and 1 tspn of cheese in the center of each slice
  5. Fold the bread in half and, using a fork, crimp 1/4-inch around the edge.
  6. Spread 1 tspn of coconut oil over the top of each folded pocket.
  7. Place pockets in the oven on a cookie sheet and bake for 10-12 minutes or until toasted.
  8. Enjoy!

Alternately, if you’re like me and can’t do the dairy thing, you can put some breakfast potatoes in the pocket instead of the cheese. Not as melty, but for the dairy-free, this is quite a treat.

If you want to freeze them, you can pop these guys in a gallon-size baggie before they’re toasted. Then, you can just thaw and pop them in the oven the day you want to send them in the kiddo’s lunchbox.

You can also ignore the toasting and just warm these puppies up in the microwave, whatever floats your boat, really. It’s not like I’m going to be upset with you for modifying the recipe to fit your needs. I just want us all to have fun.
