Look, not only did the new movie just come out, but my kids are obsessively wanting to be read the Grinch by Dr. Suess.

And The old Grinch movie–not to animated one from the 80’s but the one with Jim Carrey? It’s on Netflix.

So the kids are watching that obsessively, too.

It’s like they’re enamored with the idea giving and gifting and–you know all that happiness in Whoville.

So, we whipped-up some cute and scrumptious Grinch Sugar Cookie Bars.

You know, treats to feed the kiddies while we watch the story unfold.

Grinch Sugar Cookie Bars

Grinch Sugar Cookie Bars

This super easy recipe for Grinch Sugar Cookie Bars is a treat you can take to school parties, have a little Grinch-watching party...anything. They're little perfect treats just for me--uh, I mean perfect treats for anyone.

Ingredients

Cookie Bar

  • 1 C unsalted sweet cream butter, softened
1
  • 1/2 C powder sugar
  • 1 egg
  • 2 tsp vanilla
  • 2 1/2 C flour
  • 1 tsp baking soda
  • 1 tsp cream of tarter

Frosting

  • 2 C unsalted sweet cream butter, softened
  • 3 C powder sugar
  • 1 tsp vanilla
  • 3 tbsp heavy whipping cream
  • 3-5 drops of green food dye
  • edible red heart icing transfers

Instructions

Cookie Bar

  1. Preheat oven to 325 degrees
  2. Tear off a sheet of parchment paper long enough to fit a 9x13 baking dish
  3. In a standing mixer, combine butter, powder sugar, egg and vanilla and mix on medium speed until combined and fluffy
  4. In a large bowl, combine the flour, baking soda, and cream of tarter.
  5. Gradually add in the flour to the wet mixture and mix on low speed until combined
  6. Scoop dough into the baking dish and press down with your fingers
  7. Bake for 20-25 minutes or until golden brown
  8. Place onto a wire rack to cool completely

Frosting

  1. Using a standing mixer, combine all ingredients (except the food dye and heart transfers) and mix on medium speed until combined and stiff peaks.
  2. Add in the food dye and mix until color is combined
  3. Scoop the frosting onto the cooled cookie bars and frost
  4. Place the bars into the fridge for 30 minutes to an hour for the frosting to harden
  5. Use a sharp knife and cut into bars
  6. Place the hearts into the middle of the cookie bar
  7. Enjoy!
