I have a serious Halloween obsession. But, I’m also a little lazy. I hate cooking things that take forever–and I certainly don’t like baking things that take forever and I don’t even get to eat. So, I like to make stuff that’s fast and fun and that I can have as much as I want (and not end-up miserable and ill for a week). All of these desires collided this week and the result was Graveyard Cakemix Brownies. Stupidly simple, but so deliciously allergy-friendly and fun to make, I just couldn’t wait to share them. En-freakin’-joy, my friends. This is a good one.
One of the best parts of this recipe is truly that my entire family can eat it–with the exception of my husband who doesn’t like sweets all that much anyway. Which pretty much the awesomest thing ever. Because, seriously, Graveyard Cakemix Brownies are pretty hard to pass-up and I would have made myself sick if I’d eaten ones that had dairy…ugh, loooooong story.
Needless to say, it would be the perfect recipe for taking to my son’s school party. Since there’s no eggs or dairy and no gluten…like 90% of the kids could eat it. Which is so nice to not have to turn a kid away from a brownie.
What You Need to Make Graveyard Cakemix Brownies
Simple Mills Chocolate Muffin & Cake Mix, 10.4 Ounce
And don’t forget to toss together the headstones by making some Sugar Cookies that Don’t Spread (just use gluten-free flour, ok?)

Graveyard Cakemix Brownies
Graveyard Cakemix Brownies. Stupidly simple, but so deliciously allergy-friendly and fun to make, I just couldn't wait to share them. En-freakin'-joy, my friends. This is a good one.
- 2 boxes Simple Mills chocolate cake mix
- 1 can bean juice, to replace eggs in cake mix directions
- 3/4 cup sugar
- 1 tspn vanilla extract
- 6 tblspn coconut oil or coconut butter
- 1/2 batch sugar cookies that don't spread - shaped like headstones and RIP written on them in chocolate--this is up to you to do, I have no instructions today...lol
- 1/2 bag gluten-free pretzels
- 1 cup dairy-free chocolate chips
- Make one box of the brownies per the instructions on the back, replacing the eggs with the bean juice and the butter with coconut oil or coconut butter.
- While the brownies are baking, melt the chocolate chips in the microwave in 30-second increments until smooth.
- Dip the pretzels individually into the chocolate and set on a piece of parchment paper.
- Place in the refrigerator for 10 minutes to allow the chocolate to set.
- Allow the brownies to cool fully.
- Gently push the gravestone cookies at random intervals (or not so random) like a cemetery.
- Sprinkle about 1/4 cup of the remaining box of cake mix in small heaps on the brownies, in front of the gravestone-cookies, like little graves.
- Push the chocolate-covered pretzels into the edge of the brownies vertically, creating a fence.
