Ok, so I kinda fell in love over the weekend with a couple of new recipes I came up with. Now, down’t get me wrong, I had a couple of failed experiments, but then…I just had a symphony of perfection happen with other recipes. There’s no doubt about it–I totally pulled-off some cool stuff all by my lonesome in the past couple of days. One of my favorites: Gluten-Free & Vegan French Bread. It’s like REAL bread. Not gooey, not dry…just perfection in a loaf. I can’t wait to make it again this weekend…

See, I specifically made this loaf of Gluten-Free & Vegan French Bread to bring to my mother-in-law’s house to have spaghetti Saturday night. The thing is, I went gluten-free, but that doesn’t mean that the rest of the world had to. No, my husband certainly didn’t and there’s no way my mother- and father-in-law did, so I try to make things as easy as possible for them. Especially when they’re cooking us dinner. So, I brought my own bread and, instead of having spaghetti and meatballs, I had a meatball sandwich with my bread…brilliant, easy and kind of fun.

The thing is, I just love those meatballs my mother-in-law makes (I think if they had gluten in them, which they do not, I’d have to forgo being gluten-free just to have some meatballs). And there was no way I was turning them down. I just had to find a creative solution. And that I did, my lovelies. Because a meatball sandwich was awesome. A-W-E—S-O-M-E. That good.

Gluten-Free & Vegan French Bread

Gluten-Free & Vegan French Bread

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Gluten-Free & Vegan French Bread. It's like REAL bread. Not gooey, not dry...just perfection in a loaf. I can't wait to make it again this weekend...

Ingredients

  • 3 cups gluten-free flour blend, I used Bob's Redmill Baking flour blend
  • 1/2 tspn salt
  • 1 tblspn sugar
  • 1 1/2 tblspn instant bread machine yeast
  • 1 tblspn olive oil
  • 3/4 cup aquafaba, yes, that's bean juice
  • 1 tspn cider vinegar
  • 1 cup warm water

Instructions

  1. Do not preheat oven.
  2. Mix try ingredients together in the bowl of your stand mixer.
  3. Add wet ingredients and mix until thoroughly combined.
  4. Place dough in a pan and generally shape it (I know it's a little too wet to do too much, but try).
  5. Using a sharp knife, cut slits in the top at 3-inch intervals.
  6. Place in the cold oven and turn it on to 425-degrees.
  7. Allow to bake for 30-40 minutes, or until crust has reached the desired golden-hue.
  8. Remove from oven.
  9. Allow to cool to the touch.
  10. Slice and serve to your crazy-hungry guests!
