Gluten-Free & Vegan Caramel Sauce

Ok, so I was playing around the other day, trying to figure-out how to make a tasty sauce to drizzle over un-fried ice cream, and I managed to somehow make this Gluten-Free & Vegan Caramel Sauce. I’m sure there are other recipes out there, but this one was kind of so good I couldn’t help but share it. So, if you’ve seen something like this before, I’m sorry, but I loved it so much…just try it. You’ll like it–smothered all over everything always. Heh.

So, I heard a friend say that her husband made her some caramel sauce the other way with the “traditional” ingredients and it took like 4 hours. I don’t know if she was being serious (she’s a pretty funny gal, so maybe she was joking), because I’ve never made traditional caramel sauce. But, lemme tell you, I will not do anything that takes 4 hours–well, not anything like this. Because I have more going on than making caramel. The making of THIS Gluten-Free & Vegan Caramel Sauce only takes about 20 minutes, at most (and that’s if your heat is really low), so that’s much more manageable.

What’s not manageable is the flavor. It’s wild. It’s out of this world. I mean, for anyone addicted to Worther’s or whatever other caramel goodness, but steers clear because of the dairy…well, this is the recipe for you. Seriously. Eat as much as you like, my friend. There will be no upset tummies after a spoonful of this goodness.

Gluten-Free & Vegan Caramel Sauce

Gluten-Free & Vegan Caramel Sauce

Ingredients

  • 1 cup granulated sugar
  • 1 1/2 tspn vanilla
  • 3/4 tspn salt
  • 1/2 cup coconut cream, so, chill a can of coconut milk overnight, then scoop the thick stuff out--drain the water away

Instructions

  1. Place the sugar, salt and vanilla in a pot over high heat.
  2. Stir, stir, stir until the sugar mixture gets lumpy and brown-ish throughout.
  3. Add the coconut cream and keep stirring.
  4. Stir for a long, long time until all the lumps dissolve and the caramel is all soft and smooooth.
  5. Remove from heat and allow to cool.
