Chicken and Mushroom Gravy Ramen Recipe

Ramen is kind of king at our house some weeks. It started with microwaved cups in college at midnight over homework we’d put off until the last minute. Now, we make a ton of different ramen recipes with alarming regularity. One of my family’s favorites is Chicken and Mushroom Gravy Ramen, a mix of mushroom, ramen, chicken and yum all rolled into a super-cheap, super-easy meal. We can make it for less than $1 per person (2023 price is about $2 per person). Nice.

The thing about this specific ramen recipe is that it’s savory, filled with good stuff and your kids can play with the noodles to their heart’s content. No way do my kids turn their nose up at this dish when I put it on the table. My husband, a huge ramen-fan loves to kick-up the spice by adding cayenne pepper at the table. Either way, it’s good, good, good.

Ingredients for Chicken and Mushroom Gravy Ramen

  • 10-15 sliced mushrooms (any kind)
  • 1/2 onion finely chopped
  • 2 cloves garlic, minced
  • 2 green onions chopped
  • 1/8 cup sesame oil
  • 1/4 cup red wine or red wine vinegar
  • 1/8 cup water
  • 1/8 cup flour
  • 4 chicken legs (or thighs or combo)
  • 4 packages ramen noodles
  • Salt and pepper to taste
  • Two leaves of lettuce for garnish

Putting Together Chicken and Mushroom Gravy Ramen

  1. Place the chicken in a pot and cover with water. Turn the stove on to high heat and boil the chicken until thoroughly cooked.
  2. While that’s going, start your mushroom sauce:
    1. Sautee mushrooms in a pan with onions, garlic and oil until mushrooms are golden brown and tender.
    2. Add red wine, scrape the pan and stir it all together. Allow to simmer until it’s about halfway cooked-down.
    3. Make a mud or slurry of flour and water by mixing the two together in a small cup. Pour this slurry into the pan with the mushrooms and stir thoroughly.
    4. Add salt and pepper.
    5. Allow to thicken over low heat for approximately 5 minutes.
    6. Remove from heat.
  3. Place ramen in pot with chicken and simmer per directions on packet.
  4. Drain chicken and ramen, placing them on a plate or in a bowl.
  5. Pour mushrooms and sauce over the chicken and ramen.
  6. Garnish with lettuce and green onion.

Serves 4.
