Can I just tell you how super tasty Buddha bowls are?! I mean they are so good.

And so, so simple to make.

You can literally just pull items from your fridge to make this Buddha bowl.

This Buddha bowl is made with quinoa which is a grain commonly prepared like rice.

It’s a great base.

I like to top this with avocado, blood oranges, carrots, and cabbage.

The trick to an Asian Fusion Blood Orange Buddha bowl is not just health and belly-full; it’s having a bowl of color to entice those senses ya’ll.

Then I add some sunburst tomatoes along with this Asian special sauce I make.

It just ignites those flavors.

And now I’m hungry again. Crapola.

I have to admit that it’s all about the ginger in this Buddha bowl that gives that superior Asian flare.

 

That and the chili sauce for a little heat to match that sweet citrus of the blood oranges. If you want to spiralize your carrots or other vegetables to add more character your totally can.

This is what makes the Buddha bowl so fun and easy for dinner.

Asian Fusion Blood Orange Buddha Bowl
Yield: 2 bowls

Asian Fusion Blood Orange Buddha Bowl

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 teaspoon salt
  • 2 spring onions
  • 1/3 cup shredded carrots
  • 1/3 cup shredded cabbage
  • 1 blood orange
  • 1/2 avocado
  • 4 sunburst tomatoes
  • For Sauce:
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic chili sauce
  • 1 tablespoon honey
  • 1 teaspoon ginger; fresh grated

Instructions

  1. In a sauce pan, add two cups water to one cup quinoa. Add salt. Bring to a boil and reduce to low. Simmer for 15 minutes or until quinoa is done.
  2. Place quinoa in two bowls. Top with blood orange, onions, cabbage, carrots, avocado, and tomatoes.
  3. Mix soy sauce, ginger, garlic chiil sauce, and honey.
