I don’t know what’s up with me lately.

I’ve been all over having apple pie stuff–but not actual apple pie. That would be too easy.

So, I was playing around in the kitchen–thinking about apple pies–and came up with these amazing Apple Pie Oatmeal Cookies.

They’re really simple–and taste amazing.

I packed some for the kiddos as a snack on the way to the park.

Sadly, there weren’t many Apple Pie Oatmeal Cookies left by the time we were done playing.

But, this makes a pretty good-sized batch, so there were plenty when we got home. LOL!

Apple Pie Oatmeal Cookies

Apple Pie Oatmeal Cookies

I'm feeling slightly obsessed with apple pie lately. I've been doing anything except making an actual pie. And this time it's Apple Pie Oatmeal Cookies. So good, so so good.

Ingredients

  • 1 cup gluten-free dairy-free flour, like Bob's Redmill all-purpose
  • 1 1/4 cup gluten-free oatmeal
  • 1 cup granulated sugar
  • 2 tspn vanilla extract
  • 1 tspn baking soda
  • ½ tspn salt
  • ¾ cup melted coconut oil
  • ½ cup plain apple sauce
  • 1/2 cup peeled and diced apple
  • 1/2 tspn ground cinnamon

Instructions

  1. Preheat oven to 375 degrees.
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine all wet ingredients.
  4. In a second mixing bowl, combine dry ingredients except chocolate chips.
  5. Add dry ingredients to wet in ⅓ increments.
  6. Mix well.
  7. Stir in peeled and diced apple chunks
  8. Roll ½-inch diameter balls and place 2-inches apart on the cookie sheet. Mash them down for flatter cookies, leave them balled-up for thicker-center, chewier cookies.
  9. Bake for 12-15 minutes.
