Baked Fried Zucchini

There’s nothing better than fried food. I mean, really, who doesn’t love, love, LOVE to stuff ones face with a batch of fries (note the word “fry” in there) and maybe even a fried apple pie?! Fried things are just so freakin’ good. But seriously, you are what you eat and I am not interested in being a giant vat of liquidy oil. So, I am working toward eating a little healthier (a little) by experimenting with frying in the oven. Less oil, but still great taste? I’ll take it. Put that together with delicious veggies…I’ll be making Baked Fried Zucchini at least once a week as my “fried” treat and maybe even get my kids to eat veggies without a fight.

Ingredients for Baked Fried Zucchini

  • 5-8 sliced zucchini, the thinner the better
  • 1/2 cup milk (or unsweetened coconut milk, if you’re dairy-free like me)
  • 2 cups cornmeal
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

How to Make Baked Fried Zucchini

  1. Preheat oven to 450 degrees.
  2. Place the cornmeal, salt, pepper, garlic and onion powder in a large (1 gallon or larger) plastic baggie and shake until it’s thoroughly mixed.
  3. Place milk in another baggie of a similar size.
  4. Put the zucchini in the baggie with milk.
  5. After the zucchini has been completely covered in the milk, remove the zucchini from the bag of milk and place it in the baggie with the cornmeal.
  6. Shake until every piece of zucchini is completely covered in the cornmeal mix.
  7. Spread zucchini on baking sheet and place in oven.
  8. Bake for 10 minutes, remove from oven and flip zucchini.
  9. Place back in the oven for an additional 10 minutes.
  10. Remove from oven and allow to cool for 5 minutes for enjoying!
